Chicken And Duck Talk - Yan Hing Street
So, after a long time searching (this is actually the second time I have attempted to spot the locations from this film), I finally found the street where ninety percent of the film takes place. The shops on the chicken side of the street remain almost identical, whilst a newer build has absorbed the duck side...
The first shop on the right (white sign, red lettering) is where Michael Hui's duck shop was, the second on the left (yellow sign, red lettering) is where Lawrence Ng's chicken shop was.

She Shoots Straight - Wu Kau Tang

Tiger Cage - Sam Mun Tsai Typhoon Shelter

Iron Angels - Tai Po Industrial Estate
Through the Eastern Harbour Crossing, through Kwun Tong, along to the airport, then (as if by magic) to Tai Po Industrial Estate: Hong Kong's 'go to' location for car chases and pyrotechnics. This is where the convey escorting the gold van is ambushed.
Flash Point - Bride's Pool Road
Well, this is the spot where Louis Koo dives out of a moving vehicle, when he's been sussed out by Collin Chou. The screen cap shows the car in mid-skid, at the junction with Wu Kau Tang Road, just before it turns to knock Louis down a slope (further along Bride's Pool Road), when he rolls out on to a grass verge (further along Bride's Pool Road)...
Colour Of The Truth - Abandoned House
The makeshift cocaine processing plant is one of the many abandoned, derelict houses which seem to litter rural Hong Kong; here we're on the Sha Lo Tung plateaux, in the hills above Tai Po.

Connected - Bride's Pool Road
The stretch of Bride's Pool Road, just before the turn for Wu Kau Tan, adjacent to the picnic area; where Barbie Hsu is run into by Liu Ye.
Aces Go Places - Tai Po Waterfront Park
I remember when all this was fields dust...
So, the spot where Sam Hui and Karl Maka chase (and are chased by) Robert Houston and employ exploding remote control cars. I'd already noticed buildings in the background which I was convinced were the beginnings of Tai Po Industrial Estate, but I couldn't quite work out where the road they were on was or what had been built on the vast expanse of dirt. Then, I rewatched it and saw this shot, where the hills over at Ma On Shan are clearly visible, along with the hill at Park Golf, the shoreline and the hill with The Lookout: this placed the scene firmly in Tai Po Waterfront Park.
The park isn't covered on Street View, but this Picasa image shows almost exactly the same panorama (thanks to johnny).

The location for the film's final splash is the little pier at Sam Mun Tsai on the edge of Plover Cove. You can actually see my brother's village from here; the little white specks at the base of the hill, in the centre of the Google Maps image.
Police Story - Tai Po Industrial Estate
So, tracking down the location of the shanty town is still eluding those who are on the lookout for it, but here's a location from the subsequent chase, where Jackie Chan is clinging to the bus with his umbrella.
